【中文摘要】 檸檬酸工業(yè)廢液中含有一定有效物質,如糖類、蛋白質、礦物質等,可供微生物利用。本文介紹了利用廢液深層培養(yǎng)雙孢蘑菇菌絲蛋白的可能性及條件。并用1噸發(fā)酵堆進行生產試驗,探討了生產工藝條件,分析了發(fā)酵液中底物、產物的動態(tài)變化。雙孢蘑菇菌絲蛋白培養(yǎng)溫度25℃,底物 pH6,發(fā)酵周期6天,菌球直徑1～3mm,菌球數量4.8×103個/ml,菌絲溫重達底物量的29.3%。在上述條件下,發(fā)酵液中菌球直經、菌絲數量、發(fā)酵液粘度受生物剪切作用的影響,粘度大,剪切作用大,菌球直徑小,菌球數量則多。本文為新型單細胞蛋白的開發(fā),促進物質的多層次利用,消除環(huán)境污染,提供了一個新途徑。

【英文摘要】 The waste from-citric acid production consists of some useful materials,such as sugar, proteins and minerals,which can be utilized by microorganisms.What is described in this paper is the possability and conditions of using waste from citric acid production in a deep culture of the mycelial proteins of Agaricus bisporus.The test was made in a one-ton for- menter.The technological conditions were studied and the kinetic changes of the substrates and the products in ferment fluid were analyzed.The conditions in which the mycelical proteins of Agaricus bisporus were cultued in a large fermenter are:temperature,250;pH of the substrate,6.0;and the period of the fermentation,6 days.The diameter of the thallus can reach to 1—3mm and the wet weight of it to 29.3%.The results show a new way in exploition new-type single-cell protein,in making good use of ferment materials, and ha protecting the environment from pollution.
